Follow the steps in order

    Prep

    Soak the rice cakes for 10 minutes if they are hard. Cut the fish cake into triangles and the green onion on the diagonal.

    Dissolve the sauce

    Pour the water into a wide pan, add the gochujang, gochugaru, soy sauce and sugar, and bring to a boil while stirring.

    Cook the rice cakes

    Add the rice cakes and cook over medium heat for 6 to 8 minutes. Stir often so they do not stick.

    Add fish cake and green onion

    Add the fish cake and green onion and cook 3 to 4 more minutes. Turn off the heat when the sauce thickens and coats the rice cakes.

How Koreans eat it

Tteokbokki is a snack more than a meal. Almost every Korean has a memory of eating it standing at a stall near school or in a market. It is usually ordered with fried snacks and sundae (blood sausage), and the fried pieces get dipped in the sauce.

Tips

  • For less heat, leave out the gochugaru, cut the gochujang to 1 tbsp and add half a tablespoon more soy sauce.
  • Fry leftover sauce with rice and crumbled seaweed for a second meal.

Korean and Asian grocery stores carry them refrigerated or frozen. Thaw frozen ones in cold water for 20 minutes before cooking.

How spicy is tteokbokki?
